“Healthy” Homemade Mounds

Healthy Homemade Mounds Ingredients:

  • 1 3/4 cup unsweetened coconut (shredded) 
  • 1/4 cup coconut oil 
  • 2 TBSP pure maple syrup 
  • 1/4 cup chocolate chips (dark or millk)
  1. Line a casserole dish with parchment paper. Set aside.
  2. In a separate bowl, combine shredded coconut, coconut oil (melted), and maple syrup until it forms a dough like mixture.
  3. Press down mixture into the casserole dish to form a tightly packed layer. *It will be a little sticky! Place in freezer until set. Meanwhile make the chocolate layer....
  4. In a microwave safe bowl melt chocolate chips until smooth (add a little coconut oil to this.)
  5. Take coconut layer out of the freezer and pour chocolate on top. Use a rubber spatula to smooth.
  6. Break into little pieces and enjoy!

Of course you could use milk chocolate instead and add almonds to make them almond joys. I always keep these in the fridge for little healthy yet sinful treats after dinner or throughout the day! The picture I used is from the first time I made them in college :) Let me know if you try them!</span
